This destroys the document’s encryption key. The PDF, signatures, recipients, invitation links and audit log become unrecoverable, for everyone including administrators, and signers and viewers lose access immediately. It cannot be undone.

Only a record that it existed remains: its SHA-256 fingerprints, dates and the audit log’s final hash. Backups taken earlier may still hold the key; see the README.
